Episode 7 of our cozy dinner series cannot get any cozier than a puff pastry chicken pot pie. This dish is so nostalgic and extremely delicious, also, it’s very easy to make.

Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 tbsp of garlic powder
  • 2 tbsp olive oil
  • 3-4 carrots, peeled and diced
  • 2-3 celery stalks, diced
  • 1/2 an onion, diced
  • 2 cloves garlic, minced
  • 1 large leek (bottom whites only), washed well and diced
  • 10-15 medium sliced button or cremini mushrooms, cut into 6ths or 8ths
  • 5 springs thyme removed from the stems
  • 3 tbsp butter
  • 2 tbsp Cognac
  • 1/3 cup flour
  • 1/4 cup heavy cream
  • 2 cups chicken broth
  • 1/4 cup parsley, chopped
  • 2 sheets thawed puff pastry
  • 1 egg, for egg wash
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350 degrees and coat chicken in 1 tbsp olive oil then season with salt, pepper, and garlic powder on both sides - roast for 20-30 minutes until cooked through, set aside to cool
  2. In large dutch oven on medium heat, add butter and remaining tbsp of olive oil to a pan and saute carrots, celery, onions, and leeks for about 5 minutes, season with salt and pepper
  3. Add mushrooms, thyme and garlic and continue to cook
  4. Once all are softened (do not overcook because you still want some texture to your mixture), add flour and toast off to remove the flour-y flavor
  5. Add cognac and cook off the alcohol and top with cream and chicken broth,
  6. Now that your chicken has cooled, pull the chicken with two forks to shred, add to the filling mixture with parsley - make sure the liquid isn’t too loose or too thick and taste for seasoning
  7. Take your thawed puff pastry and lay across in your 8-10 inch pie crust, smoothing down the sides to fit the pan
  8. Top base layer with chicken mixture, be sure not to over stuff but it should just fit
  9. Roll out second layer of puff pastry and top mixture with it, cut off the excess
  10. Pinch the two layers together and seal with a fork then brush lightly with an egg wash mixture
  11. Increase oven temp to 400 degrees and bake for about 25-30 minutes until golden and cooked through
