Greek Orzo Salad

 

You can get creative with this recipe and omit or add whatever you want!

Method

  • Start by prepping your veggies - cut cucumber, cherry tomatoes, red onion, canned chickpeas, olives

  • They we air fried some artichokes to add a little crunch but not necessary

  • Orzo- this will fluff up so you don’t need much but after cooking top with lemon zest, lemon juice, salt pepper and olive oil

  • Roasted red peppers- we made ours fresh and it’s so easy. Place them on a sheet pan coated in olive oil and broil until charred, cover in a bowl with plastic wrap and let cool so you can scrape off the charred layer

  • Dressing-olive oil, bit of red wine vinegar, balsamic glaze, Greek seasoning (we use @spiceology Greek freak but oregano would be nice to add)

  • Toss everything together and finish with feta cheese, herbs like dill or basil and taste for salt and pepper
