Marry Me Chicken Orzo

Everyone is always raving about Marry Me pasta, a creamy sundried tomato dish loaded with flavor so we're switching it up with a little orzo.

Ingredients

  • 4 bone in skin on chicken thighs
  • Seasonings - salt, pepper, garlic powder, paprika, red pepper flakes
  • 1 tbsp olive oil
  • 1/2 an onion , diced
  • 1 zucchini, diced
  • 2 cloves garlic, mincdee
  • 5 sundried tomatoes in oil, chopped
  • 2-3 cups spinach, chopped
  • 1 pint cherry tomatoes
  • 2 tbsp tomato paste
  • Juice of 1/2 lemon, optional
  • 1 cup orzo
  • 2 cups chicken bone broth
  • 1/3 cup mascarpone cheese
  • 1-2 cups grated parmesan reggiano
  • Fresh herbs such as basil, parsley, chives

Instructions

  1. Start by seasoning the chicken with your with seasonings listed or add whatever you'd like, sear on medium/high heat with 1 tbsp of olive oil in your large dutch oven - you want to cook this fully through
  2. Remove the chicken and add onions, zucchini and garlic to sweat down then add in tomato paste, cherry tomatoes, lemon juice, orzo and toast off slightly
  3. Add in chicken broth and cover to let cook according to orzo instructions
  4. Mix in spinach, mascarpone, and parm and let the spinach wilt - taste for seasoning
  5. Top with the cooked chicken (and their juices) and fresh herbs and serve with more parmesan
