Vodka Pasta with Burrata

Ingredients

  • 1 finely cut shallot
  • 1-2 cloves grated garlic
  • 1/4 cup olive oil
  • 1/2 cup of tomato paste
  • Calabrian chili paste or red pepper flakes
  • 2 tablespoons of vodka
  • 2 cups heavy cream
  • 1lb box of pasta
  • 2 tablespoons butter
  • Parmesean
  • Fresh Basil
  • Salt and pepper, to taste
  • Burrata, room temperature

Instructions

  1. Add a finely cut shallot and 1-2 cloves grated garlic to 1/4 olive oil
  2. Sweat down for 3-5 minutes and add half a cup of tomato paste, let it caramelize
  3. Add as much Calabrian chili paste or red pepper flakes as you want but start small you can always add more , 2 tablespoons of vodka and cook off alcohol
  4. Add 2 cups heavy cream
  5. Make 1lb pasta and heavily salt water, you can use any pasta you want - SAVE 1 CUP PASTA WATER
  6. Add a bit of pasta water at a time, 2 tablespoons butter, lots of parm, and fresh basil to sauce - don’t forget to taste for salt and pepper
  7. Finish off with fresh room temp burrata, parm, and more basil
